A quick jicama snack

IMG_4981.jpg

If Jicama is a veggie you only encounter in Mexican restaurants, and never make at home you're in for a treat. This sort-of recipe is a sweet intro, a quick and easy way to serve jicama as a crunchy, juicy, tasty and super healthy snack, that's very low on calories.

Here's what to look for in the farmers market or supermarket -- it looks like a tuber, with thick light brown brackish like skin:

Next step: peel! A peeler will do the job nicely.

Now, cut into thick sticks (don't worry, although jicama looks creamy white it doesn't discolor like potatoes or apples).

Drizzle with lime juice, add salt and freshly ground pepper, and thats it!

Nutrition facts: Jicama has only 35 calories per 100 grams (3 ounces), it packs lots of fiber, and also vitamins (C, B complex), minerals (iron, magnesium), antioxidants and much more.

What does it taste like? Many say like a savory/sweet apple or pear, the lime giving it nice contrast -- but please try for yourself.

Prep time: 5-10 minutes

Enjoy!
